ACQUACOTTA DELLA MAREMMA

 

INGREDIENTS FOR 4 PERSONS:

 

3 onions

1 celery stalks

1 carrot

4 spoons of extravirgin olive oil

1 kg of chard

500 g of fresh tomatoes

4 eggs

4 slices of  homemade bread

50 g of grated pecorino cheese

salt and chili pepper

 

 >PREPARATION

 

Brown the finely sliced onions in the olive oil,
chopped celery and carrot and adding pieces of a chili pepper.
Add the chard cut into long thin slices
and let it brown as well for about 10 minutes.
Then add cubed pieces of tomato and cook over
ow flame for about 20 minutes.
Add a liter and a half of hot water,
season to taste with salt and chili pepper
and boil for another 20 minutes.
Prepare bowls putting a slice
of toasted homemade bread on the bottom of each. 
 Beat an egg with grated pecorino cheese,
 and pour over the boiling hot acquacotta.
