BAGNA CAODA (Turin, Piemonte)

 

INGREDIENTS FOR 4 PERSONS:

6 cloves of garlic

18-20 anchovies under salt

1 cup of extra virgin olive oil

2 cups of milk.

 

PREPARATION

Peel the garlic cloves and put them in a small pot and cover them with milk.
Cook over a low flame until the milk is nearly all evaporated.
Clean the anchovies of salt and bones and  add them
to the mixture being careful to crush the mixture with a fork
 to unravel the anchovies completely.
At this point, add this mixture to the oil and sauté it for 20 minutes.
 It is eaten with raw vegetables
(celery, fennel, capsicum, etc).
