TUSCAN CASTAGNACCIO

INGREDIENTS FOR 4 PERSONS

3 cups of chestnut flour

2 and a half  cups of milk

2 spoons of extra virgin olive oil

½ cup of candied orange peel

a fist of pine nuts

a fist of shelled walnuts

a fist of sultana grapes

1 cup of sugar

1 piece of butter

a pinch of salt

 

PREPARATION


Soak the grapes in lukewarm water.
Pour the chestnut flour in a bowl then the salt, sugar, the olive oil and
the milk a little at a time while stirring with a wooden spoon.
Dilute the mixture with a little water until obtaining a soft dough. 
Add the grapes, the candied orange peel,
the pine nuts and the chopped walnuts.
 Mix the ingredients stirring continuously.
Grease a cake pan with butter and sprinkle it with flour. 
 Pour the mixture into the cake pan and brush some olive
 oil onto its surface then add a curl of butter. 
 Bake in a preheated oven at 180°C for about an hour.
