CHOPS OF VEAL
(Milan, Lombardy)


INGREDIENTS FOR 4 PERSONS

4 veal chops

2 eggs

an ample fist of bread crumbs

a lemon

a large piece of butter

salt

PREPARATION


Flatten the veal chops slightly and salt them.
Beat the eggs and dip  in the meat.
Then dip  them into the bread crumbs and pressed them with the palm
of the hand to subsequently fix the bread covering onto the meat
which should not come off during the cooking.
Melt the butter in a frying pan and  put in the chops,
cooking each for 3-4 minutes on each side so that they remain tender.
Surround them with lemon slices.
