FILLED POTATOES
INGREDIENTS FOR 4 PERSONS

large potatoes
2
slices of bacon
100 gr of garlic cloves
a
sprig of parsley
1
egg
50
g of grated Parmesan cheese
salt and pepper
PREPARATION
Using the appropriate utensil, empty the
middle part of the potatoes
(keeping the potato shells for later use) and boil these contents
for approximately 10 minutes. Carefully grind the bacon
with the garlic and parsley, then unite it with the boiled potato
part,
crush it all together and let it cool.
Once cool, add the parmesan, the egg, and salt and pepper to taste.
Add some muscatel wine. Fill the potato shells with this mixture
then roll them in tinfoil.
Cook them for twenty minutes in a preheated oven at 180°C.
