FOCACCIA OF FLOUR OF CHICKPEAS (FLOURED Liguria)

 

INGREDIENTS FOR 4 PERSONS

5 cups of flour of chickpeas

half glass of oil

salt and pepper

 

PREPARATION

Take the chickpea flour and put it a bowl,
in which large enough for at least 5 cups of water.
 Add the water and beat energetically until obtaining enough soft dough,
 then let it to rest for a couple of hours.
In order to make the traditional round shape,
 an oven and mould is necessary but it’s recommended
 to use a nonstick teflon-type pan.
Pour the oil in the mould, then add the dough,
 tilting the mould so that the oil covers the bottom of the mould.
Put it in a warm oven at 200°C until the surface becomes gold in color. 
 Remove from the oven and serve with ham and cheese.
