MACARONI WITH FRESH TOMATO (Siena, Tuscany)

INGREDIENTS FOR 4 PERSONS

4 mature and hard tomatoes  for salad

½ cup of extra virgin olive oil

2-3 garlic cloves

4 spoons of pecorino cheese grated

a sprig of parsley

4 cups of short macaroni

salt and pepper

PREPARATION

Wash the tomato and cut it into cubes, without its skin and add it
to a ground mix of garlic and parsley and flavor all with the oil,
 adding pepper to taste. Stir the mixture.
Bring a large pot to boil with ample salted water,
cook the macaroni until firm without overcooking, then drain it.
Flavor the pasta with the sauce of chopped raw
 tomato sprinkled with pecorino.
Mix and served.
