MOZZARELLA IN CARROZZA (BREADED MOZZARELLA)
(Rome, Lazio)

 

INGREDIENTS FOR 4 PERSONS

16 bread slices (Tuscany or Apulian type)

2 mozzarellas

4 spoons of flour

2 eggs

salt and pepper

frying oil

 

PREPARATION

Cut the bread slices in half and prepare
the slices of mozzarella to the same size.
Cover the bread with mozzarella and sealed the slices with the flour
moistened with some drops of water
 in order keep the mozzarella from getting out.
Arrange the pieces on a large deep plate.
Beat the eggs adding salt and pepper
and pour this over the bread leaving them
to absorb the egg mixture for approximately an hour.
Lift the pieces carefully and put them into the hot oil and fry them.
Dry the excess grease before serving.
