MUSTARD OF CREMONA
-Lombardy-

INGREDIENTS FOR 4 PERSONS


5 apples

5 pears

2 fists of cherry

5 sour figs

3 lemons

a jar of mustard

5 cups of sugar

PREPARATION

Use a small pot for every type of fruit.
Make a syrup by melting five spoons of sugar in a glass of water
and also bring all the small pots to boil.
Check the consistency of the fruit with a fork,
since these must not lose their original shape.
Pour all the types of fruit with their syrups in a large casserole,
add the remaining sugar and the syrup  melted in a water glass.
Cook for about ten minutes until the mixture is rather dense.
Pour the mixture in a container so that it’s completely covered in syrup
and leave it to rest one week
