NEAPOLITAN SMALL OCTOPUS

INGREDIENTS FOR 4 PERSONS

kilogram of small octopus
1
cup of extra virgin olive oil
2
cloves of garlic

chili peppers

cup of tomato sauce

lemon
a
sprig of parsley
salt
PREPARATION
Clean the octopus carefully and boil them in a pot with ample water.
Do not salt the water because otherwise they will harden and become chewy.
Boil for about 25 - 30 minutes. On the side, grind the garlic
and to fry them in the oil with the minced parsley and the chili
pepper
for a few minutes, careful not to burn the garlic.
When it is golden, add the tomato sauce.
Fry over vigourous flame, then add the octopus.
Salt only before serving.
