FILLED PEPPERS (CAPSICUM) (Veneto)

 

INGREDIENTS FOR 4 PERSONS:

6 spoons of extra virgin olive oil

1 clove of garlic

a large sprig of parsley

2 PEPPERS

2 cups of rice

1 salt anchovy

salt and black pepper

 

PREPARATION

Cut two peppers (capsicum) into large halves
and remove their inner seeds and white strings
and cook the rice in ample salt water, keeping it cooked not too softly.
 In one frying pan, sauté the minced mix of garlic, some salt,
cleaned anchovy and parsley for a few minutes to brown in the oil.
Stir in the rice and add salt and pepper. 
Fill up the shell with the mixture. 
Grease an oven pan,
arrange the peppers (capsicum) and cook them
in a warm oven 180°C for 40-50 minutes.
