BAROLO RICE
(Turin, Piemonte)

INGREDIENTS FOR 4 PERSONS:

3 cups of rice

½ bottle of Barolo wine

2 cups of beef broth 

4 spoons of grated Parmesan cheese

1 onion

a piece of butter

salt and pepper.

PREPARATION

Chop the onion finely, brown it carefully in a pan with a piece of butter and,
when melted, add in the rice, constantly stirring with a wooden spoon. 
 Add the wine a little at a time. Allow the liquid to evaporate
adding broth as it dries up until cooking is completed.
 Add another piece of butter, the grated Parmesan and pepper to taste. Amalgamate all and serve the warm.
