VELVET CREAM OF PEAS

 

INGREDIENTS FOR 4 PERSONS:
 

2 cans of peas

50 g of bacon

50 g of grated cheese

50 g of butter (or four spoons of olive oil )

1 l of vegetable broth

salt and pepper

 

PREPARATION

 

Crush the bacon, put the pesto in a casserole with
the butter and let it brown for 10 minutes,
then add in the peas and let this sauce flavor for
another 10 minutes over a low flame.
Pour the broth over the mixture, bring it to a boil
and flavor to taste allowing it to cook for another
half an hour.  
Blend it with a hand mixer, salt and pepper
to taste and sprinkle over the cheese at serving.
